Lasagna business enjoys layers of success after two years in business

A lasagna stall is toasting its success after notching up two years in business this month.

Norwich-based Lasagneria served its first meals in early December 2016, and offers diners a range of lasagna and pasta-based dishes from Stall 175 at Norwich Provisions Market.

Sole owner Paolo Grazzini, who first came to Norwich from Italy in 2013, said: “People seem to love our food! And we seem to do especially well when the weather is warm, as it was this summer. At the moment, I’m looking to see where there may be opportunities to expand.”

A highlight of the first two years of operation was an Italian dinner event held locally in October, and Grazzini is keen to run similar events in the future at nearby venues.

The lasagnas are made the real Italian way, and diners can choose from classic Bolognese sauce or a vegetarian option.

Formerly the head frier at the Grosvenor Fish Bar, Grazzini comes from a family of chefs, and makes all the sauces himself, including the Bolognese and besciamella varieties.

He adds: “I first came here to learn English and I love Norwich. It’s a great city, with so many people keen to try out good food. So I’ve really enjoyed running the stall so far, and bringing a taste of Italy here!”

The famous Italian dish of layers of pasta, ingredients and sauces can trace its roots back to the Middle Ages, and Naples is credited with its invention. The earliest recipe dates back to the the 14th century.
